Ingredients (in order of use)
- 2 Boneless, Skinless Chicken Breasts
- 1/2 cup Semi-Pearled Farro
- 1 Lemon
- 1 clove Garlic
- 1 oz Pitted Nicoise Olives
- 4 oz Grape/Cherry Tomatoes
- 3 oz Radishes
- 1 1/2 oz Feta Cheese
- 1 oz Whole Dried Oregano
- Olive Oil
Materials
- Medium Pot
- Medium Pan
- Colander
- Box Grater or Zester
- Medium Bowl
Directions
1. Prep
Ingredients required: Farro, Chicken, Lemon, Garlic, Tomatoes, Olives, Radishes
- Boil: Cover and heat a medium pot of lightly salted water to boiling on high
- All produce (tomatoes, olives, radishes): Wash and dry
- Farro: prepare for boiling
- Chicken: Pat dry and season with salt, pepper, and half of the oregano
- Lemon: Halve and squeeze juice into a small bowl
- Garlic: zest or finely grate into a paste; Set aside
- Tomatoes: Halve; Set aside
- Olives: Roughly chop; Set aside
- Radishes: Halve lengthwise and thinly slice crosswise; Set aside
2. Cook the Farro (1 min prep, 18-20 min cook)
Ingredients required: Farro
- To the pot of boiling water, add the farro
- Cook uncovered 18-20 minutes or until tender
- Drain thoroughly
- Return to pot
3. Make the Dressing (1 min prep, 2 min mix)
Ingredients required: Lemon Juice, Oregano, Garlic Paste, Olive Oil
- In a medium bowl, mix together lemon juice, half of the oregano, garlic paste (as preferred), 2 teaspoons of olive oil, salt, and pepper.
4. Cook the Chicken (2 min prep, 12-14 min cook)
Ingredients required: Chicken, Olive Oil
- While the farro cooks, heat 2 teaspoons of olive oil in a medium pan on medium-high heat
- When hot, cook the chicken 6-7 minutes per side
- Transfer to cutting board
- Slice crosswise; Set aside and keep warm
5. Combine Ingredients (2 min prep, 2 min mix)
Ingredients required: Farro, Tomatoes, Radishes, Olives, Dressing
- To the pot of cooked farro, mix together the halved tomatoes, sliced radishes, chopped olives, and half of the dressing from step 2.
- Stir to combine
6. Plate the Food
Ingredients required: Farro Mix, Chicken, Dressing, Feta Cheese
- On plates, create a bed of the farro mix from step 5
- Place the sliced chicken over the farro mix
- Top with the remainder of the dressing from step 2
- Crumble the feta cheese over the chicken and farro
- Serve!
Post-Meal Assessment
This was a crazy collection of flavors all packed into a bowl. I feel like the balance could have been there, but something was missing to tie it together. For me, the olives and lemon juice were not sufficiently harmonized with the radishes and feta. All in all, though, I like it. Raisa, naturally, quite enjoyed it, herself.
