1. Prep Equipment and Ingredients
- Boil Water covered on high for [Step 2]
- All Produce (snow peas, peppers, scallions): Wash and dry
- Chicken: Pat dry, roughly chop, and season with salt and pepper; Set aside
- Snow Peas: Halve crosswise; Set aside
- Sweet Peppers: Cut and discard the stems; remove the cores; thinly slice crosswise into rings; Set aside
- Scallions: Thinly slice, separating the white bottoms and the green tops; Set aside both parts separately
- Garlic: Peel and roughly chop; Set aside
2. Make the Vegetable Mix
- In a large bowl, mix together the peas, peppers, garlic, and white portion of the scallions
- Season with salt and pepper as desired
- Set aside for [Step 4]
3. Cook the Quinoa (5 min prep, 14-16 min cook)

- Once the water is boiling, cook the quinoa, uncovered, on high for 14-16 minutes
- When done, drain and use in [Step 5]
4. Cook the Chicken and Vegetable Mix (3 min prep, 7-10 min cook)
Ingredients required: Chopped and Seasoned Chicken, Vegetable Mix
- In a medium pan, heat 1 teaspoon of olive oil
- When hot, add the seasoned, chopped chicken in an even layer and cook 3-4 minutes
- Add the vegetable mix, stirring occasionally for 2-3 minutes
- Add the soy sauce and as much of the sambal oelek as desired, stirring occasionally for 2-3 minutes (or until chicken is thoroughly cooked)
- When done, transfer to a large bowl and keep warm
5. Make the Quinoa Mix (2 min prep, 1.5-3 min cook)
- Crack the egg into a bowl and beat until smooth
- Add the sesame oil to the same pan as above and heat on medium-high until hot
- Once hot, add the quinoa in an even layer and cook, without stirring, for 1-2 minutes
- Move the quinoa to one side of the pan and add the beaten egg to the other side
- Cook the egg, stirring constantly, for 30 seconds to 1 minute
- Stir the egg and quinoa together
6. Serve! (1 min prep)
Ingredients required: Quinoa Mix, Chicken and Vegetable Mix
- In a bowl, combine the quinoa mix with the chicken and vegetable mix
- Serve in a bowl or on a plate as desired
- Garnish with the sliced green portion of the scallions
