Blue Apron: Cumin-Sichuan Peppercorn Beef

Ingredients

  • 10 oz Ground Beef
  • 1/2 lb Broccoli
  • 3 Tbsp Cumin and Sichuan Peppercorn Sauce
  • 3 Tbsp Soy Glaze
  • 1 tsp Black and White Sesame Seeds
  • 1/2 lb Fresh Ramen Noodles
  • 2 cloves Garlic
  • 2 Tbsp Chicken Demi-Glacé
  • 1/4 tsp Crushed Red Pepper Flakes
  • Olive Oil

 

Materials

  • Medium Pan
  • Medium Bowl
  • Colander
  • Knives
  • Cutting Board

 

Directions

Food Prep

  • Wash and dry all fresh produce (broccoli)
  • Cut off and discard bottom 1/2 inch of broccoli stems
  • Cut broccoli into small florets
  • Peel and roughly chop the garlic
  • In a bowl, Combine the cumin-Sichuan sauce, soy glaze, Demi-glacé, and 2 Tbsp water
  • Set aside for addition to the beef, once cooked

 

Cook the Broccoli

  • Boil 1/2 cup water on high in a medium pan
  • Boil water in a medium pot in preparation for the noodles
  • Once the water is boiling, add the broccoli florets in an even layer and season with salt and pepper
  • Reduce the heat to medium-high
  • Loosely cover the pan with foil and cook, without stirring, for 4-6 minutes (water is cooked off and broccoli is lightly browned)
  • Transfer to a plate and wipe out the pan
  • Set aside and keep warm for addition to the beef, once cooked

 

Cook the Beef and Sauce

  • In the same pan, heat a drizzle of olive oil on medium-high
  • Add the beef, garlic, and as much red pepper as desired to the pan
  • Season with salt and pepper as desired
  • Cook, stirring frequently, 5-7 minutes, ensuring the meat is broken apart, browned, and cooked through

  • Add the sauce mix and cooked broccoli
  • Cook, stirring frequently, 1-2 minutes until thoroughly combined
  • Turn off the heat

 

Cook the Noodles

  • While the beef cooks, boil water in a medium pot
  • Once the water is boiling, add the noodles, stirring gently to separate
  • Cook the noodles for 2-3 minutes until tender
  • Turn off the heat
  • Drain the noodles, rinsing under warm water for 30 seconds
  • Return noodles to the pot
  • Stir in 1 teaspoon of olive oil
  • Cover to keep warm

 

Plate the Food

  • Plate the pasta
  • Top with beef, broccoli, and sauce
  • Garnish with sesame seeds
  • Serve!

 

Post-Meal Assessment

This meal was full of flavor!  We loved it for sure.  We made a decision to keep the jus from the meat/broccoli in the pan and it definitely helped provide a consistent taste across the whole dish.
